Tips to make cooking easy...
These tips are not only for working women, but for all as we all want to make cooking an easy process...
Soak in a steel bowl or glass bowl a handful of tamarind in plain water and keep it in fridge. This soaked tamarind is easy to mash in the morning to get the essence. Such stored tamarind does not get spoilt and hence can be used as long as you want.
Keep your curry leaves in a bottle of water (like a bunch of flowers in a vase). It stays fresh and you can pluck from it when you need.
Even Greens(spinach/keerai) can be stored like this placing the root portion in water. (also coriander leaves).
If you use Hing or asafoetida(Perungayam) in the solid form, as soon as you buy it, make small pieces of it. It will be easy to get small pieces as it will be soft as soon as you buy. Then spread these pieces on a clean plate and dry it in sun. (or even under fan). Then store these pieces in a small box and use them while seasoning.
